Meet the Team

  • Catherine Mathon

    BOARD DIRECTOR

I used to be a senior executive in IT for a very large company in the Telecommunications Industry for over 20 years. I have worked in France, Germany, Washington DC. I used to Travel every 6 weeks worldwide and have experienced many different cultures and countries. I felt that I needed a change and work more in the Personal Realm, using horses. I decided to go back to school and attend the Transpersonal Counseling Psychology Program at Naropa University in Longmont. After gaining experience in several programs for Children and Community Counseling Agencies, I have created Opal Counseling Center.

My focus on giftedness, adoption, and multicultural identity formation has developed naturally out of my own experience. I love to help children, adolescents and their family members develop self-awareness and step into their authentic self through a variety of interventions like Synergetic Play Therapy, Mindfulness Meditation, Equine Assisted Therapy and EMDR.

When I am not working, I recharge my internal batteries at the barn riding my horse, travelling or on a meditation retreat. Being around Horses and Meditating are my most favorite activities, Both help me reconnect with my internal peace and higher Self.

  • Veronique Foulon

    BOARD MEMBER

As a senior Information Technology executive, I bring a unique blend of mindful leadership, strategic vision, and relationship-building to nonprofit board service. My career has spanned management and consulting roles, always guided by an entrepreneurial spirit and a commitment to creating meaningful, measurable impact.

I believe in the power of nimbleness—the ability to respond quickly to community needs—and intellectual acuity—the capacity to make thoughtful, informed decisions that drive sustainable change. My guiding principle is simple: value delayed is value denied. In the nonprofit sector, aligning technology and data strategies with mission-driven goals is essential to delivering timely and lasting benefits to the communities we serve.

As a board member, I focus on leveraging innovation and analytics to amplify community outcomes, strengthen organizational resilience, and ensure that every initiative is rooted in purpose and equity.

    DIRECTOR OF OPERATIONS

With a background rooted in the traditions of cowboy culture and years of hands-on work, I believe true horsemanship is a partnership—built on respect, trust, and listening. I bring this philosophy to every aspect of ensuring barn life—from the day-to-day to the behind-the-scenes operations—runs smoothly. As a member of the Eastern Shawnee Tribe of Oklahoma, I draw on a perspective shaped by culture, tradition, and a deep respect for connection.

I first joined the team in Boulder, back when we were known as Rocky Mountain Riding Therapy. Outside of the barn, you can find me in a round pen with a cup of coffee and a good horse, or exploring the Front Range with my family and dogs.
